How to easily create yummy raw cultured veggies for pennies!

Fermenting winter vegetables makes them probiotic, introducing beneficial friendly bacteria to the digestive system. Also fermentation breaks down goitrogens, substances which are found in raw cruciferous vegetables such as cabbage, chard, spinach, cauliflower, kale. It is important to break them down because although these vegetables are very nutritious in other ways, goitrogens can interfere with the functioning of the thyroid if taken in over a long period.

Cabbage and cucumber contain the culture that starts the fermentation process, other vegetables and even fruit can be added. Known as sauerkraut or kimchee, cultured vegetables are easy to make when you know how - here we share the quick and simple way.

Warm and Spicy Winter Soup

As the weather begins to turn for the darker and colder months, using spices such as ginger and cayenne and warming some of our food dispels any myth that raw food is for summer months and warm countries only!

One easy way to make a warm soup is to blend a lukewarm herbal tea into the mix as in this recipe.

Ingredients:

16 - 20 fluid ounces vegetable juice with1 head celery, 1 small beet, 2 carrots, 1/4 small red onion, 2 cloves garlic, a thumb of ginger, 1 lemon, 1/2 cup soaked hemp seeds, pinch sea salt

1 avocado

1/2 red bell pepper

1/2 cucumber

pinch of salt and cayenne

1/2 cup warm yogi classic tea

Blend all ingredients and garnish with some tasty dehydrated crackers and cubed raw goats' cheese, alfalfa sprouts and/or kimchee.
